Well, Christmas has been and gone, and I hope you had a good one and had plenty to eat and drink. It's a bit of a nothing time between Christmas and New Year. What do you do? Maybe tidy up a bit after the fun of Christmas, a bit of shopping for New Year and a bit of relaxing, but what about the leftover food that won't keep till New Year?

Well, unless you are feeding a very large family, I would guarantee that there will be some of that left and put into the fridge to do something with.

Do you bin it, feed it to the animals, or do you do some cooking with any leftovers?

Leftovers can be kept in the fridge for 3 to 4 days, but the risk of food poisoning increases after that. To make sure your leftovers are safe and last longer, you can: 

  • Cool and store quickly: The faster you cool and store your food, the longer it will last. 

  • Freeze leftovers: If you won't eat your leftovers within a few days, freeze them. 

  • Wrap meats and stuffing: Wrap meats and stuffing in heavy freezer wrap and put them in a freezer-safe container. 

  • Defrost in the fridge: Thaw your turkey in the fridge on the bottom shelf in a container that can catch drips. A large turkey can take up to 4 days to defrost. 

Here are some ways to use up your Christmas leftovers:

  • Make cheeseboard mac 'n' cheese: Use up leftover cheese in a dish like mac 'n' cheese with cracker breadcrumbs. 

  • Make cauliflower cheese: Use up leftover cheese in a dish like cauliflower cheese. 

  • Make cheese, potato, and onion soup: Use up leftover cheese in a dish like cheese, potato, and onion soup with crispy sage. 

  • Share leftovers: Use an app like Olio to share leftovers with local people

  • Spicy turkey ragu is a must. It is so simple; it is a nice ragu sauce with leftover chicken or turkey in it.

  • A pie with anything that is left over in it, and can be eaten hot or cold. 

  • Soup - ham and watercress Soup or just ham and potato soup. 

  • You can boil the carcass of the meat to make stock

  • Casseroles can be made with leftover meat

There are loads of recipes online for leftovers, so please don't bin them; use them, do yourselves and the planet a favour, and save some money.
